French Beef Meatballs with Comté Cheese and Bordeaux Red Wine

INGREDIENTS

  • 400 g of minced French beef 400克免治法國牛肉

  • 1 Egg 一隻雞蛋

  • 3 tbsp of milk 3湯匙牛奶

  • 100 g of bread crumb 100克麵包屑

  • 50 ml of Bordeaux red wine 50克波爾多紅酒

  • 50 g Comté cheese

  • 2 Peeled tomatoes 2個去皮番茄

  • 1 Onion 1個洋蔥

  • 1 White garlic pod 1個白蒜瓣

  • 2 tbsp of olive oil 2湯匙橄欖油

  • A pinch salt 少許鹽

  • 1 tsp of sugar 1茶匙糖

  • A sprig of fresh parsley 一枝新鮮番茜

PREPARATION


Step 1


Wash tomatoes, and start by soaking the breadcrumbs in the milk. When soaked, remove excess milk.

番茄洗淨,先將麵包屑浸泡在牛奶中。浸泡後去除多餘牛奶。

Step 2

Prepare tomato sauce: blend tomatoes, onion, clove of garlic and a little parsley. Heat oil in a small saucepan and add all the crushed tomatoes. Add salt, a little sugar and a drop of red wine. Let it fry until it thickens; cover the casserole during cooking with its lid. 準備番茄醬:將番茄、洋蔥、蒜瓣和少許歐芹混合。 在一個小平底鍋裡加熱油,加入所有壓碎的番茄。加鹽、少許糖和紅酒,煎至變稠; 烹飪時用蓋子蓋住平底鍋。


Step 3

Prepare meatballs while cooking the sauce: mix in a bowl the minced meat, the soaked and drained bread, the egg and a little chopped parsley. Add salt and pepper and knead by hand until the dough is smooth. 煮醬汁同時準備肉丸:將牛肉、浸泡並瀝乾的麵包、雞蛋和少許切碎的番茜混合在一個碗中。 加入鹽和胡椒粉,用手揉至麵團光滑。


Step 4

Shape the meat into balls. Fry the meatballs in a pan with oil. Add the red wine and let it evaporate and cook for 10 minutes. 把肉做成球狀。用油在平底鍋裡煎肉丸。加入紅酒,煮10分鐘揮發酒精。


Step 5


Add tomato sauce to the pan with the meatballs and cook for another 20 minutes until the tomato sauce thickens. Serve the meatballs with Comté cheese on top.

將番茄醬和肉丸一起放入鍋中,再煮 20 分鐘,直到番茄醬變稠。 在肉丸上放上Comté芝士。
