INGREDIENTS

400 g of beef tenderloin 400 克牛腰肉
80 g of Chinese cabbage 80 克大白菜
1 Gala apple 1個蘋果
3 coloured carrots 3個彩色胡蘿蔔
A knob of butter 一塊黃油
1 drizzle of sesame oil 少許芝麻油
Sauce ingredients 醬汁材料 :
100g feta 100克羊乳酪
2 tbsp. fresh cream 2 湯匙鮮奶油
A few sprigs of chives 幾枝細香蔥
Ground pepper 胡椒粉
A few black and white sesame seeds 少許黑白芝麻
PREPARATION
Step 1
Mix fresh cream and crumbled feta. Add the finely chopped chives, pepper and mix for making feta cream.
混合鮮奶油和碎羊乳酪,加入切碎的細香蔥、胡椒粉,混合即製成羊乳酪。
Step 2
Salt and pepper the beef tenderloin and let it rest for 10 minutes at room temperature.
將牛腰肉撒上鹽和胡椒粉,然後在室溫下靜置 10 分鐘。
Step 3
In a skillet, brown the tenderloin over high heat in a drizzle of sesame oil for about 1 minute on each side until golden brown.

Step 4
Let the beef tenderloin rest on a cutting board for 5 minutes and slice it very thinly.

Step 5
Rinse, core and cut the apple into fine sticks. In the same skillet, melt butter and sauté apples until lightly crispy.

Step 6
Peel and cut carrots into thin sticks. Cut Chinese cabbage into strips.

Step 7
Place cabbage, carrots and cooked apples in the middle of the slice of beef tenderloin and roll it on itself.
將大白菜、蘿蔔和煮熟的蘋果放在牛腰肉中間,然後捲起來。
Step 8
Sprinkle the tatakis with toasted sesame seeds and enjoy with the feta cream.
在 tataki 上撒上烤芝麻,搭配羊乳酪享用。
