
Prime Rib with Thyme Butter

INGREDIENTS
1 Rib of beef(1.2 kg) 一塊牛肋骨(1.2 公斤)
1 kg of of potatoes 一公斤薯仔
2 Shallots 兩個青蔥
4 sprigs of fresh thyme 4枝新鮮百里香枝
100 g of butter 100克牛油
Olive oil 橄欖油
Salt and pepper 鹽和胡椒
PREPARATION
Step 1
Preheat oven to 240°C. Arrange potatoes in an oiled dish and put them in the bottom of the oven for 30 minutes.
預熱焗爐至 240°C,將薯仔放入已抹油的盤內,入焗爐底部焗30分鐘。
Step 2
Prepare the thyme butter: reduce thyme leaves to a powder then add the butter in pieces. Sprinkle half of this butter over the hot potatoes and keep the rest cold. 準備百里香牛油:將百里香葉磨成粉狀,再加牛油塊。將一半牛油撒上熱薯仔上,其餘放涼。
Step 3
Salt and pepper the rib on both sides, brush it with oil, place it on the oven rack and put it in the oven for 20 minutes; flip the rib halfway through cooking. 將牛肋兩面撒鹽和胡椒粉,刷上油,放烤架上,入焗爐烤20分鐘,中途翻面。
Step 4
Let the meat rest for 10 mins under an aluminum foil sheet, before cutting it into thick slices. Turn off the oven and leave the potatoes inside, door ajar. 肉於錫紙下靜置 10 分鐘,然後切厚片;薯仔放焗爐內,門半開。
Step 5
Sweat the chopped shallots for 2 minutes in a knob of herb butter. Serve the meat slices topped with the shallot sauce and accompanied by potatoes sprinkled with the remaining thyme butter.
將小蔥切碎,放入一團香草牛油中浸泡 2 分鐘。將肉片淋上青蔥醬,佐以撒上剩餘百里香牛油的薯仔。
