Beef Yakitori
烤法式牛肉串

Ingredients

Ingredients :

  • 600 g No.7 - Fillet Tenderloin 600克牛里脊肉 (7號部位)

  • 2 red onions 2個紅洋蔥

  • 2 green peppers · 2個青椒

  • 20 g sesame seeds 20 克芝麻

  • 1 teaspoon sea salt  1茶匙海鹽


For the salad : 

  • 1 Chinese cabbage · 1個椰菜

  • 20 g dried wakame 20 克乾裙帶菜

  • 3 cl good quality soy sauce 3厘升優質醬油

  • 3 cl rice vinegar 3厘升米醋

  • 3 cl yuzu juice  3厘升柚子汁

  • 9 cl sesame oil 9厘升麻油


For the yakitori sauce : 

  • 30 cl good quality soy sauce 30厘升優質醬油

  • 15 g sugar  15 克糖

  • 15 cl mirin 15 厘升味醂

  • 2 teaspoons olive oil 2茶匙橄欖油

Preparation


Step 1


For the beef 牛肉

Soak the wood skewers in cold water.

Cut the beef into 2cm cubes.

將木串浸泡在冷水中,然後將牛肉切成2厘米的方塊。


Step 2


For the vegetables 蔬菜

Wash the green peppers and peel the red onions. Cut into 2cm cubes.

Fill a medium size pan with cold water, add the sea salt and bring to a boil.

Blanch the cubes of vegetables for 2 minutes. Drain and place in cold water to stop the cooking process. Drain and set aside.

清洗青椒,將紅洋蔥去皮。 切成2厘米的方塊。

添加冷水至一個中等大小的平底鍋,加入海鹽並煮沸。

Step 3


For the salad 沙律

Wash the cabbage and slice thinly.

Put into a large salad bowl with the dried wakame.

Whisk the soy sauce, rice vinegar and yuzu juice. Add the sesame oil and whisk to make an emulsion. For the dressing over the salad and mix well and chill.

把椰菜洗淨切片。

將乾裙帶菜放入一個沙律碗中。

加入醬油、米醋和柚子汁攪拌。 然後加入芝麻油,攪拌成至乳化, 為沙拉調味並冷藏。


Step 4


For the yakitori sauce 串燒汁

Mix all of the ingredients and set aside.

混合所有材料並放在一邊。


Step 5


For the assembly and the cooking

Alternate beef cubes, green pepper and red onion cubes on the skewers.

Heat the oil in a large frying pan and brown the beef on all sides, approx. 6 minutes in total.

Pour the sauce into a small pan and bring to a boil to reduce. It should have a syrupy texture. Brush the skewers with the reduction.

Sprinkle with sesame seeds and serve with the cabbage salad.

把牛肉塊、青椒塊和紅洋蔥塊相間地放在烤串上。

在一個大煎鍋中加熱油,將牛肉四面煎成金黄色,需時大約6分鐘。
